TASTE & FLAVOR: Albacore has a mild to medium flavor profile with firm flesh and large flakes. Like other tunas, it has a steak-like texture when cooked, but is a much softer fish than Ahi Tuna. It does however have a higher fat content which gives it a richness of taste.
PREPARATION: Our Albacore Tuna (Tombo) is great raw, BBQ-ed, or canned. Before you start we recommend you put the fish in the freezer for 5-10mins this will make the fish easier to cut and work with. Before cooking make sure to pat dry, and remove the bloodline and skin with a sharp knife. If eating raw place in freezer again before cutting into thin see through slices.

HOW IT COMES: All of our fish is fresh, never frozen and comes delivered in gallon ziplock bags.
STORING: If you choose to store your fish in the refrigerator we suggest consuming it within 3 days of delivery. If you do not plan on eating the fish within 3 days we suggest freezing it immediately after delivery to ensure freshness. Before freezing we suggest removing the fish from the bag patting it dry and placing it in a vacuum sealed bag or tightly saran wrapped and place in freezer safe ziploc bag before freezing. To defrost run cold (not hot) water over the bag for 5-10 minutes. Defrosting in the refrigerator is the second best option.

NOTES: For deliveries each pound is a weight estimate, it is not exact. We do our best to get it as close to the ordered weight as possible. Each cut of fish is about 1-2lbs in size and we suggest ordering at least 2lbs for the best cut of fish.
