TASTE & FLAVOR: Albacore has a mild to medium flavor profile with firm flesh and large flakes. Like other tunas, it has a steak-like texture when cooked, but is a much softer fish than Ahi Tuna. It does however have a higher fat content which gives it a richness of taste.

PREPARATION: Our Albacore Tuna (Tombo) is great raw, BBQ-ed, or canned. Before you start we recommend you put the fish in the freezer for 5-10mins this will make the fish easier to cut and work with. Before cooking make sure to pat dry, and remove the bloodline and skin with a sharp knife.

HOW IT COMES: Comes is 3lb loins due to size of fish. All of our fish is fresh, never frozen and comes delivered in one large loin bag. Please note all weights are an estimate and not exact, we try our best to get s close as possible. Please contact us with any weight discrepancies. 

STORING: If you choose to store your fish in the refrigerator we suggest consuming it within 3 days of delivery. If you do not plan on eating the fish within 3 days we suggest freezing it immediately after delivery to ensure freshness. Before freezing we suggest removing the fish from the bag and patting dry Then place it in a vacuum sealed bag or double saran wrapped and place in ziploc before freezing. To defrost run cool (not hot) water over the bag for 5-10 minutes or Defrosting in the refrigerator.
